Chocolate Chip Cookies

Brad got some Enjoy Life allergy free chocolate chips for his birthday, so naturally we were craving some chocolate chip cookies. I originally got the base recipe from www.heythattastesgood.com a wonderful gluten free cooking blog. However some of the ingredients called for things Landon is allergic to. So after several trials here’s the perfected “perfect” allergy free chocolate chip cookie, provided you purchase dairy, soy, well everything free chocolate chips.

Take a look at these:



Chocolate Chip Cookies

2 – 3/4 C Rice flour

3/4 C  Tapioca flour

1 t xanthan gum

1 t baking soda

1 t salt

3/4 c oil

1 c packed brown sugar

2/3 c white sugar

1 t vanilla

4 T flax meal mixed in 3/4 C hot water

1 package of allergy free chocolate chips

nuts, optional

Pre-heat oven to 375. Mix the flax meal and hot water in a small bowl. In a separate bowl mix dry ingredients. Cream sugars and oil in a separate bowl very well until creamy.  Add flax meal mixture and vanilla to the sugar oil mixture mix well. Add dry ingredients. Once combined add chocolate chips. Put onto a very well greased cookie sheet and flatten. They will not flatten when being cooked. Bake 8-10 minutes. Let cook on cookie sheet for a few minutes before removing.
