Bacon Wrapped Chicken with Rosemary

Servings: 5 people

Ingredients

  • 6 Pieces of Chicken I used boneless skinless breasts
  • 6 Slices of Bacon
  • Olive Oil
  • Minced Garlic
  • Black Pepper
  • Rosemary

Instructions

Freezer

  • Brush chicken with oil, season with pepper and a generous amount of rosemary and minced garlic.
  • Wrap with bacon.
  • Put into a gallon zip lock bag and freeze.

Cook

  • Thaw.
  • Cook in oven at 350 degrees for 45 minutes (or until done), or cook in crock pot on low for 5-6 hours or high for 3-4 hours (or until done). Chicken reaches 165 degrees

    I wonder if you could cook in crockpot then put under a broiler to crisp the bacon? Or would the bacon be too well cooked for that.

    I read the comments before trying this recipe, and liked the idea of elevating the chicken. Instead of foil balls, I put a later of cut up baby red potatoes on the bottom. The potatoes were a fabulous side dish, but the elevation left the chicken a little drier than it would have otherwise been.

      Using potatoes is a great idea! I’m going to make this with chicken thighs instead of breasts, hopefully they won’t get dried out as much.

    If you put raw bacon in the crock pot, it will not crisp, but if you elevate the bacon-wrapped chicken about an inch above the bottom, it will allow the juices to drip through and not turn it into a chewy mess. I do this in my crockpot by using four or five 1 inch balls of foil with an oval rack that fits in my crockpot set on top. The foil balls elevate the rack, and when I put the chicken breasts on the rack, they slow cook but don’t become soggy and shred-prone like they would if left to sit in the juices in the bottom of the crock.

    I *think* it this would help the bacon firm up and not be too chewy, although I have yet to actually try it. Now that I’ve found this recipe, though, I am definitely going to be trying it soon, though!

    Another thought I’m pondering is to try usin the microwave-ready bacon that’s already partially cooked but still pliable enough to wrap around the chicken…I’ll probably try both ideas at once first,microwave-ready bacon and elevation, and see how that works out.

    This sounds deLish!!! Cant wait to try it…Im a slow cooking crazy woman..so INTO the crockPot it goes..One question,.Does the Bacon Crisp up around the chicken?
