Pizza Crust

This is by far the best crust that we have found! It is soft and moist, when all the others were hard and brittle.

Pizza Crust

Ingredients

1 1/4 Cups Cornstarch
3/4 cups millet flour (we just used tapioca flour)
2 cups rice flour
1/4 Cup teff flour
1 1/2 T xanthan gum
1 1/2 t salt
1/4 t dried oregano
1/4 t garlic powder
1 package active dry yeast
1 t cider vinegar
2T sugar
1 T honey
1/3 Cup veggie oil
3 eggs of  egg replacer (either energy or use 6 Tbs flax meal mixed in 1/2 cup warm water)
1 3/4 Cups warm water (110-115 degrees)

Directions

yield: dough for two 12 inch round pizzas

Place cornstarch, flours, xanthan gum, salt, oregano, garlic powder and yeast in a mixing bowl. mix. add vinegar, sugar, honey, oil, egg substitute and lastly the warm water. Mix. Increase mixing speed to high and beat for 4 minutes.

Coat your pizza pans with cooking spray. Dough will be a bit difficult to work with (sticky) work the dough out as best as possible with a spatula (I find it helps to also spray the top of the dough with cooking spray as you spread it out)

Allow to sit in a warm dry location covered loosely for 40 minutes.

Preheat oven to 375 and pre bake crust for 20 min.

Remove crusts from oven increase temp to 400 degrees.

Add toppings, bake for another 20 min.
