Melted Cheese Replacer

I was a bit skeptical as to how it was going to taste. To my surprise it is actually really good! Although I don’t know about tasting the same as cheese, because I have not had cheese in over a year and a half. Everyone seemed to like it for dinner tonight.

I had to make some adjustments to accommodate what we had and replace with “legal” foods. I used 1/4 cup of reg yeast instead of nutritional (didn’t have any), 2Tbs of rice flour, 1 Tbs of tapioca flour,  I used frozen turkey broth instead of the water and broth powder, and I did not have any Tahini so I used the equal amount of sesame seeds.

Ingredients:

  • 1 cup nutritional yeast
  • 3 T. Flour
  • ¼ cup plus 2 T. vegetable broth powder
  • 1 cup Almond milk
  • ¼ cup plus 2 T. Water
  • 3 T. Tahini (also called sesame paste)
  • Salt, to taste

Preparation:

1.Combine nutrtitional yeast, flour and vegetable broth powder in a small saucepan, mixing together until combined. Add milk, water and tahini, and turn on heat to medium-low, mixing until all the powder is dissolved and the sauce is smooth. Heat until just thickened and warm, about 2-3 minutes. (If there is still a taste of flour in the sauce, cook for an addition 1-2 minutes over very low heat, adding 1 T of water if neccessary.) Turn off heat and add salt to taste.

Makes about 1½ cups

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes
