We use a 7 qt slow cooker by Crockpot like this:

Once you are ready to cook, simply thaw the bag, empty the contents into a crock pot, and let it cook for several hours. Equipment

  • 1 Slow Cooker

Ingredients

  • 3 Chicken Breasts boneless, skinless
  • 1 28 oz can Enchilada sauce (make sure it's gluten free if that's an issue for you!)
  • 1 Onion chopped
  • 1 can Olives chopped
  • 1 Bell pepper chopped
  • 1 can Black beans drained and rinsed
  • 3/4 cup Cheese or cheese substitute shredded
  • 5 Corn or flour tortillas for serving

Instructions

Prep

  • Add all ingredients into a gallon zip lock bag. Freeze.
    3 Chicken Breasts, 1 28 oz can, 1 Onion, 1 can Olives, 1 Bell pepper, 1 can Black beans, 3/4 cup Cheese or cheese substitute

Cooking

  • Thaw and cook in crock pot on low for 6 hours or high for 4 hours.
  • Shred chicken in crock pot once done.
  • Serve in tortillas.
    5 Corn or flour tortillas

    Thank you for such great and easy recipes! I have been diagnosed with IBS and I have to eat a very strict diet, it has been very hard to have to cook 2 separate meals for dinner each night. But with recipes like this where I can do all the work when I have free time, freeze and cook later will help me out immensely!

    I am not the owner of this blog; however, I have a child who is dairy allergic. In the recipe, she calls for cheese alternative and there are many variations from which to choose. Our family often uses Daiya, which is made from: Filtered Water, Tapioca Starch, Palm Fruit Oil, Expeller Pressed non GMO Canola Oil and/or Expeller Pressed non GMO Safflower Oil, Coconut Oil, Pea Protein Isolate, Natural Vegan Flavors, Vegetable Glycerine, Brown Rice Syrup, Sea Salt, Yeast Extract, Xanthan Gum, Lactic Acid (Vegan, for flavor), Annatto (for color) Carrageenan, Titanium Dioxide (a naturally occurring mineral), Vegan Enzyme. No whey! And it stretches like cheese and tastes pretty good – especially in a casserole style dish. Best wishes!

    I asked for dairy free recipe — this comes up dairy free yet has cheese in it or cheese substitute- (which has whey in it)– IT IS NOT dairy free– my son is very allergic to all milk butter dairy and whey!! He quits breathing– This is putting out false info saying dairy free.

      Then don’t make it. Obviously it was a mistake and you were vigilant enough to look at it and realize it wouldn’t work for your family. Take some responsibility!

    When your recipes say to “thaw and cook in crockpot” are you saying to let them thaw and then put them into the crockpot to cook or do you place them in the crockpot frozen and they will thaw during allotted cook time?

    I made it fresh and instead of chicken I substituted 2 deer steaks. I sliced the meat and sautéed it first. I only used 6 olives. It was delicious!

    Is there anything you would recommend in place of olives. Or just forgo it if we don’t like it?

      I hate regular olives also. But then I came across California Olives and those black olives are awesome! They have a light buttery flavor and they are the only olives I will buy.
