Breakfast Cookies

Breakfast Cookies

Breakfast Cookies = Breakfast + Cookies… Landon loves cookies (what 3 year old doesn’t). We don’t do a lot of sweets around here so anytime we have sweets it’s super exciting. These “cookies” are doubly exciting because I will let him eat as many as he wants! They have no added sugar and can even be made with no oil to be low calorie, low fat and full of health!

Why breakfast cookies?

Healthy

Unlike traditional cookies that are often loaded with sugar and unhealthy fats, these breakfast cookies are made with wholesome ingredients like rolled oats, flaxseed, and coconut oil. They’re also sweetened with honey, which is a healthier alternative to refined sugar.

Easy

You don’t need any fancy equipment or ingredients to make these cookies. All you need is a mixing bowl, a spoon, and some basic pantry staples. Plus, the recipe is very forgiving, so you can easily adjust the ingredients to suit your taste preferences.

Versatile

While these cookies are great for breakfast, they’re also a delicious snack any time of day. You can add your favorite mix-ins like chocolate chips, raisins, or nuts to make them even more satisfying.

These cookies are called “breakfast cookies” for a reason – they’re a great way to start your day! They’re filling, nutritious, and easy to grab on the go. You can even make a batch ahead of time and store them in the freezer for a quick breakfast option during the week.

They’re allergy-free: If you or someone in your family has food allergies or intolerances, these cookies are a safe and delicious option. They’re free from gluten, dairy, and nuts, so you can enjoy them without any worries.

In conclusion, if you’re looking for a healthy and delicious snack that’s easy to make and safe for anyone with food allergies or intolerances, then give these breakfast cookies a try. They’re sure to become a favorite in your household!

  • Mix all of the dry ingredients until well combined.
  • Add the wet ingredients then mix on medium speed until evenly mixed.
  • Scoop a well rounded tablespoon, roll in a ball and place on a lightly greased cooking sheet.
  • Flatten to 3/4 to 1 inch or so thick.
  • They will not flatten at all during baking.
  • Bake for about 20 minutes or until the edges are golden brown.

Notes

This made about 1 1/2 dozen “cookies” for me.

I have made them before using mashed banana as a substitute for the oil and they come out fine! Don’t expect them to be sweet like a “normal” cookie, they have a subtle sweetness to them, but nothing like a normal cookie would. Feel free to add a little sugar to sweeten it up.
